Who we are?
ST "Dako" is a company that deals with the manufacture and repair barrels and coopers' products. The main material we use for barrels is produced of high quality white oak. Good court is of quality material that is extracted from the ecologically clean regions of the country. Our barrels are made from quality materials with a minimum drying period of 24 months. The influence of oak aging on alcohol is determined by four main factors, type of oak drying seasons and manner and degree of firing during the manufacture of the barrel. Of these factors, the most significant impact on climate nature of the oak plays burning process. Thus he became the most important factor affecting the flavors of the wine. The process of firing is related to the traditional method using open fire of wood logs, such as cooper rely on scents that are released from the charred staves, to determine the desired degree of roasting. In time of firing when the barrel is heated to a temperature different flavors are formed as heat penetrating the roof, released components located at various depths in the wood. Tannins in the wood are the most susceptible to heat and easily broken.
